Delicate and smooth coffee on the nose and sip. The aroma is a bit muted. I contemplated giving this a 3.5 instead of 4 on the aroma, mainly because I expect so much more out of Gesha's. I was really looking for more floral and jasmine notes. I just think this could've been great, but wasn't quite.
Now, I could drink this coffee every day if I wanted to, because of the balance and acidity.
I'll also note that Sey brewed this via Aeropress at their brooklyn location/roastery. I'm not a big fan of Aeropress brewing and am sure that a nice v60 would've produced more of the floral notes.
    Notes:
    - Mild Jasmine
    - Very mild Honeysuckle
    - Quite a bit of caramel sweetness (as it cooled after about 3-4 mins)

Cupping Method:Aeropress brewed at Sey location in Brooklyn.

More Details

Roast Level: Light
Light roast coffee is a delicately roasted coffee that retains more of the beans' natural flavors and characteristics. Light-roasted coffees have bright acidity, complex fruit, and floral notes. Light roast coffee does not have less caffeine than darker roasts because caffeine levels remain stable during roasting.
Bean Source Country: Peru
Peruvian specialty coffee is distinguished by its diverse microclimates and high elevations in the Andean mountains. These factors contribute to the beans' unique flavor profile, typically featuring bright acidity, medium body, and subtle notes of fruit, chocolate, and floral undertones.
Bean Source Region: Cusco
Coffee from Peru's Cusco region stands out for its distinct flavor profile and the unique influence of its high-altitude terrain. Situated between 1,200 to 1,800 meters above sea level around the former capital of the Incan empire, Cusco's coffee benefits from a slow ripening process, resulting in a medium-bodied brew with bright acidity and a clean, crisp taste. Its flavor notes often feature fruity, floral undertones, complemented by citrus, caramel, and chocolate hints. The region's volcanic soil, elevation, and weather create some of the world's best specialty coffee.
