Legit. This a winter 2022 tasting espresso, 1.5 oz extraction at 94 degree Celsius. 5 stars. Balanced, beautiful acidity, bergamot, pomegranate. Like a unsweetened bar of 70% dark chocolate. Nice linger on palate. -

Grabbed this bag after a sampling at Clover Food Lab. This is an outstanding Ethiopian thats all fruit yet super smooth. Black tea is the prevailing platform, with hints of floral honey, red grape, and peach.Cupping Method:Chemex pourover

I normally dont love Ethiopian coffee (too dark for me), but this one is so good. I loved it. Could drink it all day.Cupping Method:Tried it first at Clover as a pourover and then bought beans and made it at home as a pourover. Equally as good. I always have pourover black.

Really lovely, complex and smooth and a joy to drink. I love it when coffee is a taste sensation, and this one nailed it. The ending note is acidic and a little fruity.Cupping Method:Pourover with cream

Tandem does great Ethiopian. Definitely a black tea platform, lots of fruitiness, definitely get the peach, maybe a light raspberry.Cupping Method:Pourover, Hario v60 @ home and at Clover Food Labs

Today this clean, easy-to-drink natural Ethiopian coffee that left a greatimpression. Its fruitiness was more pronounced than the funk typically associated with natural processes, almost giving it the clarity of a washed coffee. The flavor profile included delightful notes of strawberry, white grape, lavender, and bergamot. The acidity added a touch of brightness, making it a well-rounded cup. The florality was on the subtle side.
While this coffee was close to a perfect score for me, it was narrowly edged out by another Ethiopian roast I tried the same day from Intelligentsia. The latter had an even greater clarity and brightness that I found particularly appealing. Nonetheless, this natural Ethiopian was an exceptional brew, showcasing the beautiful complexities of its origin.Cupping Method:Pourover at Clover Food Labs in Harvard Square, Tasting notes attached.

Delicious peachy, fruity Ethiopian. Has some black tea character and some chocolate (a hint mid-palate). Though it's not that complex compared to some Ethiopians, the notes it does hit are quite delicious.Cupping Method:At Clover Food Labs in Burlington, MA (drank it mostly iced, but got a little of the hot)
Editor's Overview
It's a relaxed, accessible roaster focused on single origin roasts. We haven't seen too many super high end or fancy roasts from them - just great seasonal coffee roasted well.
