A delicious Ethiopian that represents a perfectly executed example of this origin.

Flavors are bright and balanced. The platform here is earl-greyish. It has a long, complex bergamot / floral linger.

There's a lot of natural sweetness, and cranberry/orange character that reminds me of a scone I really like from the local farm. The acidity is more complex and tart in the citrus range than orange, maybe like a satsuma, a Japanese orange that's both sweet and crisply tart.

Moxie is one of the roasters that does the best with depth of flavors for me, and this is no exception. These are quality Ethiopian beans that have been perfectly roasted.

Cupping Method:I played around with Hario v60 temps here. I liked it best at 196F. 20 clicks on the Encore Baratza.

This is a great roast! I would say it runs a little more like a light/light-medium, with excellent balance and a unique flavor profile. The flavor profile aligns with the advertised flavors of black tea and apricot.

More Details

Roast Level: Light
Light roast coffee is a delicately roasted coffee that retains more of the beans' natural flavors and characteristics. Light-roasted coffees have bright acidity, complex fruit, and floral notes. Light roast coffee does not have less caffeine than darker roasts because caffeine levels remain stable during roasting.
Bean Source Country: Ethiopia
Widely regarded as the birthplace of coffee, Ethiopia boasts diverse and complex flavors, from bright, floral, and citrusy in Yirgacheffe to wine-like and berry-toned in Sidama. The country's heirloom varieties, combined with unique processing methods, make Ethiopian coffee truly distinctive and sought-after by enthusiasts worldwide.
Bean Source Region: Gedeb
Gedeb coffee, originating from the southern Yirgacheffe region in Ethiopia, is cultivated in a unique terroir at high altitudes of 1,800 to 2,200 meters, with rich volcanic soils and a favorable climate, contributing to its exceptional quality. Its flavor is characterized by a vibrant acidity, akin to citrus or wine, combined with intricate floral notes like jasmine or bergamot, and complemented by complex fruit flavors such as peach, lemon, or berry. The coffee is predominantly made from indigenous Ethiopian heirloom varietals, known for their genetic diversity and contributing to the light to medium body and tea-like mouthfeel of the brew.
