Sometimes I see this cherry/maple combination and it makes a little nervous. I find they can lack acidity. This is not the case here. It's a balanced and smooth roast, versatile enough to be used as espresso, but best as an easy drinking filter/pourover. The cherry is subtle and you get a strong black tea, then a touch of maple and peanut as the finish.

As espresso it's straightforward, a little earthier and chocolately, with a clean, medium acidity for a roast on the lighter side.

Cupping Method:Espresso and pourover. Pourover at 203F worked well but I got more suble notes at 200F. I used around 16:1 ratio each time.

I would say this roast leans much more towards light characteristics. Well-balanced, smooth, and flavorful with an underlying acidity. Refreshing flavor profile features a lightly sweet cherry with hints of fresh straw, black tea, and something intriguing I can't quite put my finger on.

Cupping Method:Vietnamese drip, cream with no sweetener

More Details

Roast Level: Light Medium
A Light Medium Roast coffee, sometimes referred to as a "City Roast" or "American Roast," lies between a light and medium roast. This roast level strikes a balance by preserving the coffee bean's unique characteristics while allowing for a moderate development of body and flavor. The beans have a medium brown color, exhibiting a slight sheen of oils, providing a more balanced and nuanced flavor profile. A Light Medium Roast typically highlights the coffee's inherent fruity, floral, or citrus notes, while also providing some of the deeper, richer flavors associated with medium roasts.
Bean Source Country: Colombia
Colombian coffees are known for their balanced taste, featuring bright acidity, medium body, and a range of flavors, including fruity notes, caramel sweetness, and nutty undertones. Colombia's worldwide reputation for producing great coffee at scale is well-deserved. Increasingly some of the best microlot specialty roasts are coming from Colombia thanks to their expertise in cultivation and process.
Bean Source Region: Nariño
Nariño combination of high altitude, volcanic soil, and proximity to the equator creates ideal growing conditions that result in coffee beans with bright acidity, complex flavors, and a distinctive floral aroma. Nariño coffee is often characterized by its well-balanced profile, with notes of citrus, red fruits, and chocolate, making it a core of the iconic Colombian flavor beloved globally.
