Calling all Yirgacheffe lovers. Our Chelbessa Ethiopia elegantly displays the classic tasting notes we have come to love from this beloved coffee growing region in Ethiopia where some of the world’s best coffees are grown. It is floral and lively with tasting and aroma notes of strawberry, raspberry, lemon-lime soda, rose and tropical punch. This particular coffee is certified organic and shade-grown on plots intercropped with other food crops, creating a sustainable and environmentally friendly growing environment. Ripe coffee cherries are selectively hand harvested by smallholder farmers who then deliver their cherries to the Chelbessa Washing Station, a family-owned and operated washing station in the Yirgacheffe region. Chelbessa’s team processes only the ripest cherries. After sorting, coffee is pulped and fermented for 24 to 36 hours. The coffee is then washed and sent through grading channels, where it is separated based on density. Once graded, the coffee is soaked in clean spring water in tanks for 12 to 24 hours. The coffee is then dried on raised beds for 10 to 14 days, where it is regularly turned, hand sorted, and covered during the hottest parts of the day to protect from drying to quickly. It is also covered at night to prevent condensation from seeping into the drying coffee.

    This JBC Ethiopian coffee provides an exquisite blend of flavors that is surprisingly reminiscent of Colombian coffee, with its full body and exceptional smoothness setting it apart from other single-origin options. The robust black tea notes and a subtle herbal and floral undertone create a sophisticated and complex profile, captivating the palate from the first sip. The balance achieved between these bold flavors and the coffees inherent characteristics is tasty and complex.

    The coffees acidity is delicately handled, presenting itself in a citrusy fashion without overwhelming the taste buds. The finish is particularly noteworthy, leaving a refreshing aftertaste of tangerine and lemon that lingers just long enough to invite another sip. Its a nice blend of flavors that results in a coffee experience that is both vibrant and comforting.
