    A very clean, easy-to-drink coffee that's quite different from your typical Mexican, notably diverging from the chocolate/earthy characteristics. Instead, this is a low acidity light roast that drinks very smooth with black tea and red apple character, plus a touch of pineapple. For a light roast, it doesn't have much complexity, but it's so smooth you could drink a gallon of it in 5 minutes.

    I'm not sure these beans are distinct from what you usually get from Mexico, or the character comes from Whiptail's distinctive light roast approach.

Light roast coffee is a delicately roasted coffee that retains more of the beans' natural flavors and characteristics. Light-roasted coffees have bright acidity, complex fruit, and floral notes. Light roast coffee does not have less caffeine than darker roasts because caffeine levels remain stable during roasting.

Mexican specialty coffee is marked by its diverse growing regions, rich volcanic soil, and varied microclimates. These coffees often showcase mild acidity, medium body, and a range of flavors, including chocolate, nuts, and subtle fruit notes. Once treated as commodity beans, Mexico's shade-grown Arabica is benefitting from a more nuanced examination of its micro-terrain.

Oaxacan coffee has lush mountains, rugged valleys, and fertile soils with altitudes of up to 2000 MASL. Oaxacan coffee has rich chocolate notes, nutty undertones, and delicate floral nuances, often complemented by subtle smoky or spicy notes.
