Colombia Linarco Rodriguez Pink Bourbon

This Pink Bourbon variety is produced by the COE winning estate of Finca El Diviso by Linarco Rodriguez. A wonderful example of the floral and delicate nature of the variety, you'll find complex notes of blood orange and fresh dates. This coffee comes from Cofinet, a group of Colombian producers who produce, process, and source coffees across the country. We have long sampled coffees from them, but purchasing has escaped us until now. We are excited to release this coffee as a reflection of what not only Cofinet can do, but the stunning work of Linarco Rodriguez. Here’s what Cofinet has to say about this lot: “This coffee was grown by Linarco Rodriguez. This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved. This micro-lot is 100% Pink Bourbon. This varietal is currently under research in order to determine its origin. It is said that it is a mutation that took place at 2100 m.a.s.l in San Adolfo, Huila.”
