"For this coffee, Neja used a technique called double soaking to process the cherries. Basically the cherries are de-pulped and put into water to ferment. Next they are scrubbed and placed in water to ferment again and receive a second scrubbing before heading to the raised drying beds. As you might imagine this produces a "cleaner" and sweeter tasting coffee."
