Tasting notes: Cocoa, Plum, and Cinnamon. This coffee is an noteworthy blend of washed coffees from Kenya and Colombia that delivers a balanced acidity, silky mouthfeel, and sweet lingering aftertaste. We like the malty chocolate body of the Kenya and the floral sweetness of the Colombia. We recommend this coffee for Pour Over, French Press or Drip! It is also good on espresso, but I would not recommend it with milk as the shot will get lost. I would say Drip/Pour Over would be the suggested method. Brewing: Kalita - 1:16 Dose: 36 grams Brew Water: 575 grams Grind Setting: 8.5 on EK43 (Medium Course) Brew Time: 3:45 Dose 36g, 75g bloom pour with water at 209, bloom for 45 seconds. At 45 seconds start your second pour, and pour up to 215g. At the 2-minute mark, pour up to 365g, let drain. At 2:30 pour to 500g. Final pour of 575g begin at 3:00. Brew should finalize at 3:45 French Press: 40g of coffee ground EK43 11 into your preheated French Press Add 640g of water at 209 degrees. Stir after 45 seconds, let sit for another 6:15, then depress the plunger and serve This brew resulted in a sweet yet surprisingly low-bodied brew. Caramel sweetness, mild acidity, and a lingering sweetness on the finish!
