From the roaster: Delicate fruity aroma, with flavors of almond, banana, pear, green grape, beach plum, cocoa powder and jasmine tea. High toned with a long, sweet finish.

Our Tolima is produced by the Asociacion de Productores Agropecuarios de Cafes Especiales de Planadas, or ASOPAP, a forty-farmer-member coffee cooperative in the southern portion of Tolima located in the municipality of Planadas. The members of ASOPAP are young, determined and energetic and are forward-thinking in their ecological agricultural practices as well as in the democratic economic and management structure of their cooperative. The farmer members are all located at high altitude in the fertile, volcanic soli of the Magdalena River Basin. They take great pride to continue the tradition of cultivating the traditional coffee varieties of their region: Bourbon, Typica, Caturra and Castillo.

    I didnt love it. Normally I love Colombian pourover. I couldnt taste any specific flavors.

    Angel's Cup Blind Tasting. Visually, a very light roast. Had a coffee from the same roaster I loved just a few weeks ago (the Ethiopia Sakaro Anaerobic). This Tolima Light Roast is very very light indeed, almost a green tea-type characteristic as a platform. Nothing negative, easy-to-drink blonde roast without much acidity or complexity.

Light roast coffee is a delicately roasted coffee that retains more of the beans' natural flavors and characteristics. Light-roasted coffees have bright acidity, complex fruit, and floral notes. Light roast coffee does not have less caffeine than darker roasts because caffeine levels remain stable during roasting.

Tolima's coffee producers cultivate their crops on the slopes of the Andes mountain range, allowing the cherries to benefit from high altitudes, rich volcanic soils, and cooler temperatures, which can lead to slower ripening and more complex flavors. Tolima's location in the central north and central south zones of Colombia provides optimal climatic conditions for coffee cultivation, with two distinct dry seasons and two wet seasons annually. This combination of ideal climate, altitude, and soil, along with the expertise of local coffee growers, results in the production of exceptional coffee beans with pronounced aromas, balanced acidity, and distinctive cup profiles.
Organic
