Our flavor notes are chocolate, with sweet praline and a red apple finish. This coffee is smooth and balanced with a good creamy sweetness. Our new Organic Mexico Chiapas Triunfo Verde Fairtrade coffee is grown in the El Triunfo Biosphere Reserve, the most diverse evergreen cloud forest in Mexico, and one of the most diverse forest reserves in the world. El Triunfo is a rare and precious refuge to thousands of plant and animal species; biological corridors are created in order to facilitate bird and animal migration. riunfo Verde has all of the microclimate conditions to produce excellent coffee: an altitude of 1200-1750 masl, shade-grown heirloom coffee varieties such as Bourbon and Typica, and passionate coffee growers who collaborate to produce high-quality microlots. Mexico has recently become a big player in the high-end specialty-coffee world. The cup quality of Triunfo Verde has been solid year after year. The co-op is made up of 346 members and is managed by Hugo Lares, with Calixto Guillén managing quality control supervision. Triunfo Verde co-op commercializes their coffee through a third party, allowing them to focus on what they do best: producing good, strong coffee.

More Details

Roast Level: Medium
Medium roast coffee balances the beans' natural flavors and the roasting process, providing a well-rounded taste profile. When selecting a medium roast, look for a balance of acidity and sweetness, with caramel, nuts, and chocolate notes and a medium body.
Bean Source Country: Mexico
Mexican specialty coffee is marked by its diverse growing regions, rich volcanic soil, and varied microclimates. These coffees often showcase mild acidity, medium body, and a range of flavors, including chocolate, nuts, and subtle fruit notes. Once treated as commodity beans, Mexico's shade-grown Arabica is benefitting from a more nuanced examination of its micro-terrain.
Bean Source Region: Chiapas
Organic
Organic coffee is produced without synthetic chemicals, such as pesticides, herbicides, and artificial fertilizers. Instead, organic coffee farmers rely on natural and sustainable agricultural practices like crop rotation, composting, and biological pest control. To be labeled as organic, coffee must meet strict regulations and certification criteria set by governing bodies, such as the United States Department of Agriculture (USDA) or the European Union (EU). Organic coffee not only supports environmental sustainability but may also offer health benefits, as it contains fewer chemical residues than conventionally grown coffee.
