DIEGO BARANOA Named in honor of the Pyrenees, the mountain range that serves as a natural border between Spain and France, Finca Los Pirineos is the mountainous divide between the coffee towns of Santiago de María and Berlín, located in central El Salvador on the slopes of Tecapa Volcano. By some accounts, cultivation of coffee on the farm started in 1890, but whatever the exact date, the farm has been owned by the Baraona family for well over a century. Although specializing in heirloom variety Bourbon, an additional 94 varieties of coffee are maturing in a test nursery next to the mill. Initial results of these experimental plots are beginning to come in, with the goal of identifying the best varieties for planting elsewhere on the farm. In the coming years, we look forward to seeing how these new coffee varieties naturalize on the farm.

More Details

Roast Level: Light
Light roast coffee is a delicately roasted coffee that retains more of the beans' natural flavors and characteristics. Light-roasted coffees have bright acidity, complex fruit, and floral notes. Light roast coffee does not have less caffeine than darker roasts because caffeine levels remain stable during roasting.
Bean Source Country: El Salvador
The unique flavor profiles of Salvadorian coffees often feature notes of chocolate, caramel, and tropical fruit, with bright acidity, making them a favorite among connoisseurs. The coffee-growing areas of El Salvador are characterized by volcanic slopes, high altitudes, and fertile soil, providing ideal conditions for the cultivation of high-quality coffee beans.
Bean Source Region: Usulutan
Usulután coffee is deeply influenced by the terroir of its eastern El Salvador origin, a region distinguished by its volcanic soils and a distinctive microclimate. These volcanic soils, rich in minerals and nutrients, lend Usulután beans a unique depth and complexity of flavor. The balance of rainfall, altitude, and the shadowing canopy of native trees further refine its character, producing a coffee that boasts a medium to full body with an undertone of chocolate and caramel. The mild citrus acidity can be attributed to the nuanced soil pH levels, while the silky mouthfeel is a testament to the perfect harmony of the region's climate and terrain.
