Roast Level: Light
Bean Source Country: Thailand
Varietal: Typica, Catimor
Process: Chaptalization Natural

Note: Chaptalization is a winemaking process in which sugar is added to grape juice or must before or during fermentation to increase the final alcohol content of the wine, not to make it sweeter. The added sugar (usually sucrose) is converted by yeast into alcohol and carbon dioxide during fermentation. This practice is most commonly used in cooler wine-growing regions where grapes may not ripen fully and therefore lack sufficient natural sugar. Chaptalization is regulated or restricted in many wine-producing countries to preserve regional style and prevent over-alcoholic wines.

This is a very nice coffee and better than most Thai roasts that I have ever had. Reminds me of a good Sumatran. Complex and distinctive, with a funky, herbal edge that remains balanced and smooth. Notes of sweet orange lead, followed by subtle freeze-dried strawberry. Rooibos in the platform. It's a very clean finish.

Cupping Method:18:1, 92C, Hario v60. This coffee came from Bean Archives.

More Details

Roast Level: Light
Light roast coffee is a delicately roasted coffee that retains more of the beans' natural flavors and characteristics. Light-roasted coffees have bright acidity, complex fruit, and floral notes. Light roast coffee does not have less caffeine than darker roasts because caffeine levels remain stable during roasting.
Bean Source Country: Thailand
Thai coffee stands out for its distinctive and vibrant flavor profiles, attributed to its unique terroir and local processing methods in the country's northern regions. The high-quality Arabica beans cultivated in the cool, mountainous terrain are known for their mild to medium body and delightfully fruity, floral, and sometimes nutty or chocolatey notes. As a result, Thai coffee has become a hidden gem in the world of specialty coffee, increasingly capturing the attention and appreciation of coffee enthusiasts worldwide.
