The process of naturally decaffeinating this Colombia coffee uses sugarcane ethyl acetate (E.A.) decaffeination. This method begins with the fermentation of sugarcane molasses to produce ethanol. This ethanol is then combined with acetic acid to form ethyl acetate, which is used to remove caffeine from the coffee beans. Contrary to what the name may suggest, the final product contains no sugar.
