A magnificent medium espresso with tremendous complexity. Has florality, fruitinesss around chocolate and syrupy character. A little bit of spice. Really outstanding. The flavor of this decaf reminds me instantly of the holidays, and I can imagine myself drinking it with my family around the fireplace. I think that's because there's a prominent holiday spice and sugar plum flavor to it. It's also naturally sweet (a touch of maple?) and very smooth. A very smooth pourover with a clean acidity in the green apple and grapefruit range. The grapefruit is light and pleasant and not the polarizing/rindy type. Same with the green apple - it's not so much that it's tart, just that the green apple flavor is very much there. It drinks more black tea at the front but there's note of chocolate in the linger. Had 4.5 stars in my notes and ordered it at least 4x from Clover Food Lab. Don't see it available from Speedwell currently but other Palo Blancos available from other roasters. -

I feel like I get two very distinct and crystal clear flavors from my cup, which are jasmine tea and grapefruit zest. Grapefruit zest meaning this coffee has bright, fragrant citrus flavor with a hint of bitterness.
It's a very smooth and easy-to-drink coffee. Deviates fairly significantly from the grape/peach fruitiness described by the bag, and I think it takes a bit more work to appreciate.Cupping Method:I had this pourover at Common Good Co., a coffee shop and co-working space in Waltham, MA.
