This coffee offers a dessert-like experience in a cup, crafted through a meticulous process in partnership with Cata Export in Colombia. The Castillo cherries are carefully fermented anaerobically for 48 hours at 20°C, followed by a thermic shock wash. They are then dried under controlled conditions for 34 hours at 35°C and 25% relative humidity, reaching an optimal grain moisture of 10%-11%.
The result is a unique flavor profile featuring notes of cardamom, pistachio, vanilla cake, and honey. With its thoughtful processing and distinctive taste, this coffee stands out as a truly special offering.
