    The producer used a 72hour anaerobic fermentation, then washed the cherries in hot and then cold water. The resulting cup was an explosion of flavor like nothing I had expected. It had this intense strawberry jam sweetness mixed with a vibrant tropical acidity with a warm cinnamon spice note. My appreciation for this coffee is down to the incredible innovation in processing. It is an indication of producers pushing the whole idea of flavor further by creating entirely new and exciting flavor profiles from the coffee cherry itself.
