The coffee from Berkeley-based Hydrangea is notable for its fruit-forward profile. It underwent a wine-inspired “bio innovation” process, where the coffee cherries were placed in clay pots buried in the forest floor and anaerobically fermented using a compost designed to enhance the flavor. After fermentation, the beans were washed and dried. The resulting cup has tasting notes of citrus, blueberry, and orange rind.
