    I had the barista at Madrid coffee store pull a shot of each of 2 espressos they had available, this one, and a Myanmar from Familia Osorio. The Myanmar was exceptional. I think one had some nice florality and fruit but was a touch too acidic without a full expression of those characteristics that you want to see in a lighter espresso. Pretty light bodied overall though the crema was nice. Not quite enough to get that truly A+ espresso mouthfeel. I'd be happy to have it again but wouldn't seek this roast out as espresso.

    Cupping Method:Head to head pull of the two espressos being served at La Deseada in Madrid. Very good baristas there and I do think it speaks well to this roaster and roast that it's on offer there.

    This is a washed pink bourbon, I suspect with some extended fermentation beforehand as theres a bit going on.

    The dry aroma is sweet with mandarin, cocoa and a green tea thing too. Wet aroma more just sweet cocoa. The flavour is very good with some juicy malic pineapple bright citric acidity, caramel sweetness, some nice peach, nectarine and floral notes and some chocolate notes too.

    I dont know if Id pick it out on a table but Its a very enjoyable classy, and well balanced coffee nonetheless.

The coffee-growing region of Huila, located in southwestern Colombia, is renowned for producing high-quality coffee due to a combination of factors, including its high elevations (1,200 to 2,000 meters above sea level), tropical climate with well-defined wet and dry seasons, rich volcanic soil, and diverse coffee varietals (such as Caturra, Colombia, Bourbon, and Typica). These conditions contribute to the slow development of coffee cherries, resulting in Huila coffee's bright acidity, medium to full body, and complex flavor profile, often including fruity, floral, and nutty notes. Combined with Colombia's strong technical expertise in cultivation and processing, results in some of the world's best specialty coffees.
