Organic Fair Trade

Enjoy the sweet and nutty flavors of pecan pie, nougat, and golden raisin when you sip this fair trade, organic, and women-produced single-origin coffee from Asociación Coordinador de Muejeres Campesinas de La Paz (COMUCAP)—a women’s cooperative in Honduras. ASOCIACIÓN COORDINADORA DE MUJERES CAMPESINAS DE LA PAZ (COMUCAP) COMUCAP (Asociación Coordinadora de Mujeres Campesinas de La Paz) is a women’s cooperative located in southwestern Honduras, in the Marcala growing region. The association collectively owns over 100 hectares of farmland, as well as a wet mill, drying patios, and cupping and roasting rooms. Thanks to the success of the association, many of the members have been able to purchase their own land where they cultivate additional coffee and other crops. When we last visited the co-op in January of 2019, we were impressed with the infrastructure the women had built to produce high quality coffee and other unique products. The association also grows aloe vera in the cooler, higher-elevation areas that are not suitable for coffee. The group uses the aloe vera to produce an assortment of products ranging from soap to beverages for domestic distribution. The co-op continues to focus on the sensory evaluation needed to improve quality and is mindfully working on variety and micro-lot separation projects. COMUCAP is both Fair Trade and Organic certified, and owns and operates an organic compost production facility.

More Details

Roast Level: Light Medium
A Light Medium Roast coffee, sometimes referred to as a "City Roast" or "American Roast," lies between a light and medium roast. This roast level strikes a balance by preserving the coffee bean's unique characteristics while allowing for a moderate development of body and flavor. The beans have a medium brown color, exhibiting a slight sheen of oils, providing a more balanced and nuanced flavor profile. A Light Medium Roast typically highlights the coffee's inherent fruity, floral, or citrus notes, while also providing some of the deeper, richer flavors associated with medium roasts.
Bean Source Country: Honduras
Honduran specialty coffee is distinguished by its diverse growing regions, such as Copán, Santa Bárbara, and Comayagua, each offering distinct flavor profiles due to the country's varied microclimates and elevations. Coffee from Honduras often features bright acidity, medium body, and a range of flavors, including fruity, nutty, and chocolatey notes.
Organic
Organic coffee is produced without synthetic chemicals, such as pesticides, herbicides, and artificial fertilizers. Instead, organic coffee farmers rely on natural and sustainable agricultural practices like crop rotation, composting, and biological pest control. To be labeled as organic, coffee must meet strict regulations and certification criteria set by governing bodies, such as the United States Department of Agriculture (USDA) or the European Union (EU). Organic coffee not only supports environmental sustainability but may also offer health benefits, as it contains fewer chemical residues than conventionally grown coffee.
Fair trade
Fair-trade coffee refers to coffee beans that are produced, traded, and sold following a set of ethical and social standards designed to ensure fair treatment of farmers and workers in the coffee industry. Fair Trade organizations work to create a more equitable global trade model by prioritizing the well-being of small-scale coffee producers and farm workers, primarily in developing countries.
