In cities like Vancouver, Toronto, Montreal, Ottawa, and Calgary, one can discover a multitude of roasters and cafes, each with its own unique charm and dedication to the craft. Canada was on the leading edge of 3rd wave coffee, and Canadians seem to hold their roasters and baristas to higher standards (politely, of course). Local roasteries continue flourishing, emphasizing ethical sourcing and direct relationships with coffee producers. Many Canadian roasters ship to the US and internationally, and coffee from Canadian roasters can be a bargain, depending on the exchange rate.
