    I dont know if its just that I havent had cold brew in awhile, but that was so good. Just the right balance.

    A really nice fruity cold brew, a tasty streak of blackberry with a nutty/caramel/brown sugarcharacter front of palate (pretty subtle). Acidity is just right.

    Juicy, interesting roast. Starts off for me with blackcurrant and black tea with a bit of grapefruit. Some natural sugar (maple syrup mentioned by the roaster is apt). Then you really get the citrus, with lime and perhaps a touch of rosemary like herbaceousness. The lime for some will be a bit much.

    Its an interesting journey lining up with some of the better Guatemalans coming out these days.

    As good a matcha latte as I can ever remember having. Grade of matcha is really good and oat milk selection works super well.

    Syra has really well trained baristas. A chai latte (or any drink with added calories) is a rare treat for me, but Syra has earned my trust. The chai latte was well-executed and not too sweet, as they often are in the US. I wish they'd use a bit more ice but I think one or two large cubes is the standard in Spain.

    Cupping Method:Oat milk. Actually got to the office and dropped an espresso capsule to make it dirty and it still held up.

    This is a solid Ethiopian light pourover, but I'm not totally blown away. All the really good characteristics of Ethiopian are there, black tea, raspberry, peach. This roast just has a strong herbaceousness that's throughout the palate when hot. They have herbes-de-grace or rue on the bag. That could be it. That's much more muted as it cools, and then it's so light and fruity it's almost chuggable.

Syra is the tip of the spear in 3rd wave style coffee in Spain. For our US-based editorial team, Syra reminds us a bit of Blue Bottle in the early days. The baristas were well-trained, and the coffee was different than the standard and quite good. Syra outposts are stylish and clean, and offer a variety of specialty wave gear including Aeropress and Hario drippers/filters.
