A very good cafe espresso roast with balance and good depth of flavor. God crema, nice mouthfeel. Natural sweetness in the toffee range with a blackberry note to balance things off.

Cupping Method:Double espresso at Nana's in Mystic, CT (yes California roaster in Yankee/coastal foodie land).

Had this as cold brew - great depth of chocolate notes. No bitterness at all. A lot of natural sweetness and good balance. Chocolate linger as the finish.

Cupping Method:Nana's in Mystic CT was using as cold brew.

This is a well-balanced, slightly lighter medium roast. Flavors hinted at lightly sweet blueberry, almost lychee, with a hint of rose. This would make a nice summer cup!

Cupping Method:Vietnamese drip with condensed milk

My wife really liked this as espresso. I felt like I couldnt really get it to pop for me. Different strokes for different folks! I think is a very classic Colombian bean roasted slightly lighter.

As pourover, I get orange and caramel without a lot of brightness in acidity. As espresso, its clean and lemony.

I thought this was versatile with the weather turning hotter. I wouldve turned the rest into cold brew, but I saved it for my wifes espresso drinks she liked it so much.

Cupping Method:Mainly for espresso drinks, iced Americano, coffee tonic. I also made it once as pourover 15g in, 267g water at 196G on v60.

Editor's Overview

Canyon Coffee, based in Los Angeles, is known for its commitment to organic and single-origin coffee beans. The company was founded in 2016 by Ally Walsh and Casey Wojtalewicz and has grown from a local project to a brand recognized in multiple locations worldwide. Their first brick-and-mortar shop opened in Echo Park, Los Angeles, where they continue to roast their coffee on-site, contributing to their hands-on approach to quality. Canyon has gained national recognition and we’re starting to see it some of East Coast’s hippest coffee shop.

The Echo Park cafe embodies the aesthetics of a modern coffee shop with wooden furniture and vinyl records playing in the background, creating a vibrant yet relaxing atmosphere. They offer a variety of coffee drinks, including unique offerings like pistachio milk cortados and draft lattes with flavors like fig leaf, chai, and oat.

Canyon Coffee's commitment to community and quality is evident in their menu and the design of their café, which aims to create a welcoming space for customers to enjoy their coffee in a thoughtfully designed setting. They also have plans to host pop-ups and expand their wholesale activities, emphasizing their role as a growing hub in the local and now national coffee scene.
