At Black Sheep, coffees are hand-selected through a rigorous cupping process. This involves a combination of cupping for flavor and considering the practices of each farm where the coffee is grown. Once a coffee is chosen to be part of their roast program, a roast profile is designed to accentuate the most desirable characteristics of the coffee. The end result of this selection process is to offer customers coffees that highlight the finest qualities of each origin while supporting human and environmentally sensitive practices.

Cupping Method:My friend is a Black Sheep fan and has it delivered to Massachusetts. He shared some of the beans with me. I did it as pourover v60, 18:1 ratio. I did it at 199F and 195F and I thought the the lower temp was better (crisper acidity).
