Decaf

This smooth decaf opens with rich aromas of date, toffee, dark chocolate, and a hint of rosemary. Notes of date, cocoa powder, and cinnamon accompany root beer sweetness in the cup. The aftertaste features candied pecan and a touch of grapefruit. "Peru is a shining example of progress and development through relationships. In 2014, we met Rony Lavan, a cupper at a cooperative in the Cajamarca region of Peru. After spending some time working alongside him, we started talking about sourcing smaller, higher quality, and more traceable offerings together. Since he founded Lima Coffees in 2017, we have been sourcing and developing the majority of our Peruvian coffees alongside his team, spending time in Jaen cupping and approving coffees while visiting farms and connecting with the many fantastic producers that Lima Coffees represents. "Rony is an ambitious and quality-driven cupper who has spent his career trying to carve out better and bolder coffees from small producers in Peru. While the country is emerging as a specialty market after many years of focusing on bigger lots and certifications, Rony's passion is for identifying and developing the top scores and the best cups. "As president of the Lima Coffees exporting organization, Rony has already established himself as standing at the fore of quality coffees in Cajamarca. His first year with Lima Coffees, he entered the national competition and won; with the introduction of the Cup of Excellence competition to Peru in 2017, the country is poised to enter the international spotlight for its finest offerings. Rony and his coffees will be the ones to watch."

More Details

Roast Level: Medium Dark
Medium-dark or Vienna roast coffee features a deeper, richer flavor profile due to its longer roasting time. When selecting a Vienna roast, look for a lower acidity, bolder body, and flavors with dark chocolate, caramel, toasted nut notes, and mild smokiness.
Bean Source Country: Peru
Peruvian specialty coffee is distinguished by its diverse microclimates and high elevations in the Andean mountains. These factors contribute to the beans' unique flavor profile, typically featuring bright acidity, medium body, and subtle notes of fruit, chocolate, and floral undertones.
Bean Source Region: Jaen
Decaf
Decaffeinated coffee has undergone a process to remove most of the caffeine content while preserving its flavor and aroma. There are three primary decaffeination methods. The solvent-based method involves soaking coffee beans in water to dissolve the caffeine, followed by adding a solvent, such as methylene chloride or ethyl acetate, to bind to the caffeine molecules selectively. The Swiss Water Process (SWP) is a chemical-free method that relies on the principles of solubility and osmosis. Finally, the carbon dioxide method involves using supercritical carbon dioxide to extract caffeine from the coffee beans. Decaf coffee typically retains most of the flavor and aroma of regular coffee but with a significantly reduced caffeine content (around 2-3%).
