    The aroma was very soft and delicate initially. Slightly grassy and tea like. Oolong tea perhaps. As the coffee opened up, a subtle stone fruit presence was noticeable. Later, the stone fruits became juicier and punchier, and the aroma was sweeter overall. Some herbal notes were also detectable. Hint of bergamot too. Touch of melon as well. As the coffee approached room temperature, the herbal notes intensified. The flavor profile was similar to the nose but slightly sweeter and punchier. Tea-like notes dominated initially. Oolong tea again came to mind. Touch of herbality as well. Nice subtle stone fruit presence too. Fuzzy peach perhaps. Nice crisp acidity in the center. Some drying, green tea-like tannins appeared in the finish and lingered after the swallow. As the coffee sat, the stone fruits and the overall sweetness became more pronounced. Ripe, juicy peach notes came to mind. All in all, medium-high sweetness in both the aroma and the flavor. Medium to medium-high acidity in the aroma and medium-high acidity in the flavor. Outstanding soft, creamy, juicy, lighter bodied mouthfeel. This coffee was incredibly subtle initially and took a very long time to finally show its true character, but once it did it was terrific. Be sure to give these beans an extra long rest and a hard push during the brewing process.

    The aroma was juicy and nuanced initially. Delicate stone fruit notes were most apparent. Nice fuzzy peach skin quality. Ripe peach flesh was also noticeable. Hint of green tea and grassiness. Touch of honeydew melon too. The stone fruits and the sweetness intensified as the coffee opened up. Later, the green tea and grassy notes also became more pronounced. Bergamot appeared as well. The flavor profile was juicy, fruity and sweet from the start. Stone fruits came through strongest. Freshly picked peach and nectarine notes specifically. Matcha tea was noticeable as well. There was a pleasant floral quality in the center. Peach iced tea appeared on the back end and carried into the finish. Subtle drying, tea-like tannins lingered after the swallow. Overall, excellent sweetness in both the aroma and the flavor. Medium to medium-high acidity in both aroma and flavor. Outstanding juicy, lighter bodied mouthfeel. Creamy and silky smooth on the palate. This is an impressive overall Gesha that I would be happy to drink everyday.
