It's incredibly sweet with acidity that intensifies significantly as it cools. There's a lot of umami here and a pretty strong hint of tomato. It washes out the usual pink bourbon florality except a late bit of florality/funk. That said it's pretty tasty overall and has a really nice mouthfeel.Cupping Method:Hario v60, 18:1, 196F
