Recently, we had a conversation with Leonid Yuffa, the President of Dazbog Coffee in Denver, about traditional roasting approaches and how they’ve evolved to meet modern specialty tastes.

Your roasting style draws heavily from old-world techniques. How do you stay true to those roots while responding to the evolving flavor preferences in the specialty coffee community?

Leonid: Gourmet coffee in the United States has evolved dramatically since its earliest days, and Dazbog Coffee, as a local coffee roaster in Denver, is proud to have been part of that journey. Our roasting style is inspired by European traditions and has been crafted to shine for the American palate. We roast to highlight the beans’ natural sweetness and rich body, which is why people love our coffee. For nearly 30 years, we’ve thrived not by chasing every new trend, but by consistently offering well-balanced specialty coffees that people truly love.

Many traditional methods favor darker, fuller-bodied roasts, while modern specialty coffees often highlight lighter, fruit-forward notes. How do you reconcile or balance these expectations in your roasting approach?


Leonid: Dazbog Coffee in Colorado offers a wide range of roasts and blends to suit all tastes. Our core blends emphasize natural sweetness without heavy smokiness, as we bring out fantastic potential in every coffee from all origins. Our Svoboda (Freedom) Blend is a perfect example of a medium roast with immaculate balance. At the darker end, our KO Blend, a French Roast style, is bold and full-bodied. For those who prefer lighter, brighter coffees, our Breakfast Blend and Hermitage House highlight citrusy, fruit-forward notes. Because we source exceptional beans from farmers across every major coffee-growing region and bring them to our roastery in Denver, we’re able to provide both variety and quality with organic coffee and single-origin offerings as well as signature blends.

Old world roasting often emphasizes heritage and consistency. Today’s specialty coffee drinkers also seek transparency, traceability, and experimentation. How do you blend storytelling from both traditions when presenting your coffees?


Leonid: At Dazbog Coffee, balance is at the heart of everything we do, whether in the flavor of our coffees or in how we tell our story. Our journey is the story of the American Dream: my brother and I escaped the Soviet Union as children and built what started as a small roasting company into a thriving regional Colorado coffee business. Our size allows us to build meaningful relationships with coffee producers around the world, while also giving us the flexibility to experiment with new products and methods. At the same time, we remain committed to consistency by delivering the great-tasting coffee our loyal customers expect, while continuing to surprise and delight new fans.

Have you noticed changes in how your longtime customers perceive or request coffee, especially as modern specialty tastes like bright acidity or complex florals become more mainstream?


Leonid: Dazbog Coffee customers come from every walk of life, and over the past three decades we’ve watched tastes evolve. Some roasters chase every trend, but we’ve let our customers guide our evolution rather than forcing it. That consistency has helped us thrive. In recent years, we’ve seen growing interest in our organic coffee and single-origin coffees, with some customers seeking citrusy brightness and floral aromas. Still, our best-selling coffees remain the ones rooted in the American coffee palate: Balanced, smooth, and naturally sweet, with just the right harmony between brightness and body.

Do you see your role as preserving a timeless roasting craft, or as adapting that craft into a bridge that shapes the next wave of specialty coffee appreciation?


Leonid: At Dazbog Coffee, our role is simple: to make coffees people love. We’re not stuck in the past, nor are we chasing the next big thing. We focus on the present, crafting well-balanced coffees across a range of roast levels and origins, and delivering them in our iconic bright red Dazbog coffee bag. In doing so, we preserve the timeless aspects of roasting while also giving people the freedom to explore what they love most about coffee today.
